At Elliston they believe that wines get better with age, to that end they cellar and bottle age their wines for longer than most California wineries.
The reds are cellared for a minimum of two years, and aged in the bottles for at least one year before being released.
The white wines are cellared for a minimum of one year, and bottled aged for another year or longer before being released.
When visiting the tasting room, it isn't uncommon to taste wines that are four to ten years old.
